How to Make Ube Iced Matcha, Ube Coconut Cloud and Ube Latte

How to Make Ube Iced Matcha, Ube Coconut Cloud and Ube Latte

How to Serve the Vibrant Flavour of Ube

If you have noticed a striking splash of violet on your social feed or appearing on menu boards, you have likely caught a glimpse of ube. Pronounced "OO-beh", this vibrant purple yam is native to the Philippines, where it has been a cherished staple in desserts and street food for generations.

What Is Ube And Why Is This Purple Sweet Potato So Trendy?

Recently, ube has taken the global culinary scene by storm. Brilliant purple lattes, mocktails, and sweet treats are popping up everywhere from Manila to LA.

What Does Ube Taste Like?

The flavour profile of ube is wonderfully unique, grown-up, and balanced. It sits somewhere between vanilla, coconut, and sweet potato. It delivers a gently sweet, nutty taste with a naturally creamy texture and an unmistakable violet hue. It pairs beautifully with ingredients like coconut, white chocolate, and matcha.

Integrating this showstopping trend into a beverage program is simple, using a few streamlined preparation methods to create high-quality ube drinks.

The Ube Cold Foam Recipe

The secret to a premium iced drink is a velvety layer of cold foam floating on top. This recipe creates a rich, vanilla-kissed ube foam that elevates any beverage base.

Ingredients:

  • 18 pumps of Ube syrup

  • 1 tablespoon of vanilla paste

  • 600ml cream

Method: Combine the ingredients and froth using a milk frother, blender, or automatic foam maker until thick and creamy. This technique follows the exact same standard operational method as traditional cold foams.

Three Ways to Serve Ube

Here are three distinct and highly visual ways to build ube drinks using efficient, cafe-ready specifications.

1. Iced Ube Coconut Cloud

This refreshing, tropical option is an excellent afternoon feature drink.

  • Step 1: Add 1 pump of Ube syrup to the bottom of a 16oz iced cup or glass.

  • Step 2: Fill the cup completely with ice.

  • Step 3: Pour in coconut water until it sits just above the line.

  • Step 4: Top the cup with a layer of the freshly prepared Ube cold foam.

2. Iced Ube Matcha

Earthy matcha and sweet ube offer a perfect contrast in both flavour and presentation.

  • Step 1: Add 1 pump of Ube syrup to the bottom of a 16oz iced cup or glass.

  • Step 2: Fill the cup to the line with ice.

  • Step 3: Add the preferred milk of choice until it reaches the line of the cup.

  • Step 4: Pour in the prepared matcha mix.

  • Step 5: Fill the remaining space with a generous layer of Ube cold foam.

3. Hot Ube Latte (Caffeine Free)

For a warm, comforting option without the caffeine, this smooth drink acts as an excellent alternative to a traditional hot chocolate or steamer.

  • Step 1: Select the desired cup or glass size (8oz, 12oz, or 16oz).

  • Step 2: Pour a small amount of hot water into the bottom of the cup, using the same initial step as a standard hot chocolate. This step is highly important because it prevents the ube from clumping together.

  • Step 3: Add the syrup directly into the hot water based on the cup size. Use 2 pumps for an 8oz cup, 3 pumps for a 12oz cup, or 4 pumps for a 16oz cup.

  • Step 4: Mix the syrup and water together thoroughly.

  • Step 5: Top with texturised milk poured gently using standard latte execution.

Menu Tip: When sourcing ingredients, selecting options that prioritise natural colours and flavours will ensure the final beverage remains perfectly balanced without tasting artificial. Using plant-based milks like coconut or almond milk also makes it incredibly easy to adapt these recipes into dairy-free and vegan-friendly options for any menu.
