We source 100% Arabica coffee beans from Mexico, where the Catimor varietal is grown at a medium altitude of 900-1200 metres, developing naturally complex flavour notes.
Once harvested, the beans undergo the Swiss Water decaffeination method, which gently extracts caffeine while retaining the natural flavour profile. When the beans arrive at our Brisbane roastery, they are roasted daily using the same techniques and standards that define Merlo’s signature blends. The result?
