AUGUST BEAN OF THE MONTH | MUSTANG FROM EL SALVADOR
Our August Bean of the Month ‘El Salvador Mustang’ makes a striking first impression. Its aroma is reminiscent of a late summer harvest, filled with the enticing fragrance of ripe red fruits and grapes.
Once brewed the flavours become reminiscent of richer fruit: juicy blackberry, elegant fig, and exotic tropical fruits. The texture is deliciously jammy, balanced with the bright zing of pineapple acidity.
But it is the moments after the first sip that reveal Mustang’s standout feature – a sparkling champagne finish, which is celebratory and elegant.
MUSTANG'S ORIGIN PROFILEEl Salvador, a small yet mighty coffee-producing country, manages to produce an impressive 85,000 tonnes of coffee per year, despite having a national landmass only one-third the size of Tasmania. To put this into perspective, the whole of Australia produces a mere 600 tonnes of coffee annually.
They've got us covered in coffee consumption too. On average, an El Salvadorean drinks 2.8kg of coffee per year, while Australians come close, with a respectable 2.2kg per person.
The El Salvador Mustang coffee comes from a remarkable family with a long history of cultivating coffee in the Sonsonate Valley. The property was acquired by Don Rafael Meza-Ayau Snr in 1936, and now his grandson, Roberto, oversees the finca's operations.
They grow their coffee under the shade of a natural rainforest and involve family, neighbours and friends in the harvest process.
The recent audit conducted by Rainforest Alliance awarded them a perfect scorecard, recognising their commitment to socially and environmentally responsible practices at Finca Majahual.
