The Story Behind the Moka Express
Invented by Renato Bialetti in 1933, the Moka Express became a kitchen staple across Italy for its affordability, durability, and ability to make great coffee in minutes. Nearly 90 years on, the design remains largely unchanged, proof of its enduring popularity.
Fun fact: our founder, Dean Merlo, is a daily fan of the Moka Express and brews his morning coffee using this very method with our Espresso Blend.
What You’ll Need to Brew - Exceptional Stovetop Coffee
To get started, you'll need three essentials:
1. Stovetop Coffee Maker
We recommend the traditional Bialetti Moka Express, available in a range of sizes. As a guide, it produces about 60ml (2oz) per cup. For 1–2 people, the 3-cup version is ideal.
2. Freshly Ground Coffee
For best results, use a grind rating of 5.1. You can grind fresh at home, order online, or visit us in-store for freshly ground coffee. Try our Private Blend, Espresso Blend, or Forza - or explore multiple flavours with our Sample Pack (4 x 250g).
3. A Gas or Electric Stove
The standard Moka Express isn’t compatible with induction cooktops due to its aluminium design. While induction-friendly versions exist, Merlo currently does not stock them.
Steps to Brew Stovetop Coffee
This traditional brewing method uses steam pressure to deliver a strong, sweet cup in under five minutes.
- Fill the base chamber with filtered water, just below the pressure valve. Don’t overfill.
- Add ground coffee to the filter basket, level it off, but don’t tamp.
- Place the basket into the base, screw on the top securely.
- Heat the Moka Express over medium heat to allow a slow, even brew.
- Once the top chamber starts spluttering or gurgling, remove from heat immediately. Use an oven mitt or tea towel.
- Warm your cups, pour, and enjoy.
Tips to Perfect Your Stovetop Brew
- Adjust water temperature: Using pre-heated (but not boiling) water can shorten brew time and reduce bitterness.
- Experiment with heat levels: Higher heat may bring sweetness; lower heat can increase bitterness. Avoid burning the coffee.
- Try different roasts: For a lighter, more acidic brew, sample one of our filter roasts like Colombia.
- Wash carefully: Always hand wash with warm water only. No detergent or dishwashers can affect flavour or damage the unit.
