The coffee plants grown in the highlands are derived from the famous Jamaican Blue Mountain coffee estates, sharing many of the same unique flavours.
With the climate in the highlands of Papua New Guinea (PNG) being perfect for arabica beans, the conditions provide a coffee that is medium-bodied with a fruity aroma, raspberry and orange flavours, and a dark chocolate aftertaste. Our PNG coffee is ideal for those who like it sweet, smooth and crisp.
PNG is well known for its ACO-certified organic coffee beans, which we source to make our Papua New Guinea Single Origin roasted coffee.
PNG coffee beans: Jamaican origins
Jamaican Blue Mountain coffee beans were first introduced to Papua New Guinea by the Germans and the British in the 1800s, where they set up plantations along the coast. However, the British didn't set up commercial production there until the 1920s.
Several years later, the island's interior was discovered and found to be extremely fertile, especially for arabica coffee plants. The Papua New Guinea coffee beans are grown over volcanic soil. Over time, volcanic deposits form a nutrient-rich, highly fertile soil that creates the richest agricultural landscapes, the perfect climate conditions for coffee plantations to thrive in the highlands. Merlo sources these PNG coffee beans for our Papua New Guinea Single Origin coffee.
Most coffee is grown on small, family-owned plantations across hundreds of local tribes, and the isolation of these coffee plantations has resulted in most of the coffee being grown organically - no pesticides or chemicals. These days, Papua New Guinea produces only 1% of the world's coffee, but it generates over 40% of the country's income.
A taste of PNG coffee
Our PNG beans are medium-bodied with delicate raspberry and orange flavours, with a chocolatey aftertaste. It's an organic coffee that's good for you and exceptionally tasty.
To ensure the flavours are consistent, we use the washed method for our PNG coffee beans to completely remove all the outer layers of the coffee cherry down to the parchment before drying. Done in three steps using machinery, fermentation and water, this process typically creates a clean, crisp and acidic coffee.

PLUNGER (coarse grind: 6.2)
Plunger (or French Press) and other similar immersion brew devices, which involved the ground coffee having contact with the water for an extended time. A coarse grind is most effective.
AEROPRESS & FILTER (medium grind: 5.7)
This category includes a range of brew devices that use filters (paper or reusable). Devices include the AeroPress, & AeroPressGo, the Hario V60, Chemex & Fretta, the MoccaMaster and other cone-filtered methods where water is poured over ground coffee. A medium grind is recommended.
STOVETOP (medium/fine grind: 5.1)
Also known as Moka pot, a stovetop to produces a strong, concentrated coffee, and is best with medium/fine grind is best for this brew device.

REFILLABLE PODS (fine grind: 3.5)
No matter the brand, or type of refillable capsules or pods you have, a fine grind works best.
TURKISH (very fine grind: 2.0)
Turkish coffee combines extra finely ground coffee with water, boiling it in a small pot. An extra-fine grind is essential because Turkish coffee is served unfiltered.
Please note: while we try and grind to your specific settings, we cannot guarantee the grind setting will be exact for your set up.
