Under Extraction

An under extracted shot can be caused by :

  • incorrect grind (too coarse)
  • insufficient amount of coffee in group handle
  • tamp was incorrect
  • ground coffee was left to sit in dosage chamber for a long period of time
  • incorrectly adjusted machine


You can tell a shot is under extracted if :

  • extracts too quickly
  • the crema appears thin, light in colour and bubbly
  • cake is sloppy
  • tastes sour
