Under Extraction
An under extracted shot can be caused by :
- incorrect grind (too coarse)
- insufficient amount of coffee in group handle
- tamp was incorrect
- ground coffee was left to sit in dosage chamber for a long period of time
- incorrectly adjusted machine
You can tell a shot is under extracted if :
- extracts too quickly
- the crema appears thin, light in colour and bubbly
- cake is sloppy
- tastes sour
