Over Extraction
An over extracted shot can be caused by :
- incorrect grind (too fine)
- packed in group handle too hard / tight
- group head not flushed out correctly / build up of coffee in the group head
- too much coffee in the group handle
- an incorrectly adjusted machine
You can tell a shot is over extracted if :
- It tastes bitter
- Extracts out too slowly and has a thin dark crème
- Has a burnt/black ring around the outside of the crème
