Over Extraction

An over extracted shot can be caused by :

  • incorrect grind (too fine)
  • packed in group handle too hard / tight
  • group head not flushed out correctly / build up of coffee in the group head
  • too much coffee in the group handle
  • an incorrectly adjusted machine


You can tell a shot is over extracted if :

  • It tastes bitter
  • Extracts out too slowly and has a thin dark crème
  • Has a burnt/black ring around the outside of the crème
